The spot prawn is the largest shrimp family member on North America's northwest coast. It is the most succulent and tastiest example of any shrimp species from this region. Its range stretches from northern California to southern Alaska, however it is mainly fished in British Columbia and Alaska.
The spot prawn fishery in British Columbia runs for approximately six weeks during May and June after the winter spawning season has ended. The fishery uses traps for minimal impact on the ocean floor and bycatch. As each trap is hauled from the ocean, its contents are sorted, and any bycatch, such as small fish, crabs, undersize prawns, or prawns with eggs remaining, are returned to the ocean immediately to ensure maximum survival rate.
The prawn tails get packaged into tubs and are flash-frozen on the vessel at -45°C. The maximum time elapsed between the prawns landing on the boat and when placed in the freezer is 30 minutes. This ensures a product which retains maximum freshness and maximum shelf life.
